Coconut Pyramids: Parev Recipe (suitable for Pesach)

2 eggs
125 g castor sugar
juice and zest of one lemon
225 g desiccated coconut.


  • Heat oven to 190°C
  • Beat eggs and sugar until foamy and pale
  • Stir everything else gently
  • Wet egg cup and use to shape
  • Re-wash out egg cup every 3 to 4 pyramids
  • put in oven and take out when the tops are light brown (15-20 mins)
