2 eggs
125 g castor sugar
juice and zest of one lemon
225 g desiccated coconut.
Method
- Heat oven to 190°C
- Beat eggs and sugar until foamy and pale
- Stir everything else gently
- Wet egg cup and use to shape
- Re-wash out egg cup every 3 to 4 pyramids
- put in oven and take out when the tops are light brown (15-20 mins)
